If you'd like a paper stock where readers can write on, we recommend selecting an uncoated paper type. All paper stocks for our trade books are uncoated so both the Economy black and white and Standard black and white would work. For photo books we recommend the ProLine Uncoated paper.
I want my book to be interactive. I want to create a space for the readers to write notes, doodle, etc. What paper would be best for that? Would economy black and white work? or would I need standard black and white?

You'd want to go with an uncoated paper so the pen ink (if they use it) absorbs into the paper. Creating the space is a layout issue, not a paper issue. Your layout will determine the space you want for the note and doodle areas.
